In Australia, the hospitality and food service industry (even households), produce large amounts of grease, fat and oil based waste. Offensive grease trap odours or malodours are caused by fats, oils, greases (FOG) and food waste settling near the top of the grease trap which are slowly breaking down.

When kitchen wastewater flows through the grease trap, the FOG will rise to the surface and are captured by a system of baffles. This system is effective because it traps the FOG from top to bottom while allowing the clean water to pass through down the sewage line.

Over time fats, oils and greases will naturally break down and decompose.
